Simple Tomato Basil Salad
I absolutely love salads that do not require dressing preparation on a side. Like this Simple Tomato Basil Salad – cherry tomatoes, fresh basil and the rest are the spices in your fridge/pantry. You throw everything together in a bowl and gently stir. The end result – delicious full of flavour summer salad full of antioxidants, vitamins A + C, and folic acid. And of course with a bit of a heat kick with Tabasco® Original Red Sauce.
And the best part of this salad is at the end – the juice. Serving ideas are endless. Serve alongside Grilled Lemon Rosemary Chicken or Greek Style Chicken Kebabs. Also Spicy Cilantro Fish Kebabs pair nicely with this salad. In all honesty, I don’t worry too much about food pairings. I just make sure I cover all groups at almost every meal (some dinners are lighter) – carbs, protein and fats. Of course the meal should make sense but food is food. I wouldn’t serve Mediterranean Quinoa Salad with a Summertime Pasta Salad, but quite often my plate looks quite versatile. Especially with all the recipe testing that’s going on in my kitchen. So, don’t over think your meals. Just eat real food and enjoy every bite. I have been working really hard on eating slow and enjoying my meals. It’s hard!:) But I will keep trying. Enjoy the salad!
1.5 lbs cherry tomatoes, cut in quarters
2 tsp olive oil, extra virgin
1 tsp apple cider vinegar
1/2 tsp original Tabasco sauce
1/4 cup basil, chopped
3/4 tsp salt
1/2 tsp ground black pepper
Add all ingredients to a medium bowl and gently stir to combine. Serve chilled.
Storage Instructions: Refrigerate covered for up to 24 hours.
