Loaded Chicken Salad Sandwiches with Guacamole


These Chicken Salad Sandwiches are loaded with the best ever chicken salad made with healthy ingredients and topped with a simple guacamole


This here my friends, is real sandwich artistry! This is the best chicken salad sandwich you will EVER eat. Not that I’m biased or anything, but you must try this.


I had a whole roasted chicken I bought yesterday so I used the chicken breast from it and chopped it up. Then I added a bunch of veggies, green onions, roasted red peppers, green bell pepper, celery, red onion and even some chopped pecans for that extra crunch. I skipped the mayo and added instead some smooth plain cottage cheese. I also had some really ripe avocados so I just mashed them up, seasoned them generously with salt and pepper and added some lime juice. For the bread I used this great dark rye I found at my grocery store.

Let me tell you these sandwiches were the bomb. So much flavor in that chicken salad and that simple guacamole made all the difference. It was creamy, crunchy from the pecans and celery, just fabulous. So for not wanting to cook much, I did pretty well. Next time you crave a chicken salad sandwich, give this one a try, it’s so worth it.



Dark rye bread
2 cups cooked chicken, shredded or cut small
1 red roasted red pepper
¾ cup cheddar cheese
1 stalk celery, chopped small
2 green onions, chopped small
½ green bell pepper, chopped small
½ cup pecans, chopped
½ cup parsley, chopped
¼ cup red onion, chopped small
Smooth plain cottage cheese
salt and pepper to taste
2 avocados, mashed
juice from one lime
Lettuce leaves


In a medium size bowl mix together all the chicken salad ingredients: chicken, red pepper, cheddar cheese, celery, green onions, pecans, parsley, red onion, cottage cheese, salt and pepper. In another small bowl, roughly mash the avocados, add lime juice, season with salt and pepper and mix.

To assemble sandwiches, start with laying lettuce leaves on the slices. Divide the chicken salad among the 4 sandwiches and load them up. Top with guacamole then the last slice of rye bread. Cut in half and enjoy. Sprinkle with more lime juice as needed. Enjoy!:-)
